Gastronomy  Mardi-Gras doughnuts

Mardi-Gras is the French name for the Fat Tuesday. This Christian celebration takes place every year in France in February or March depending on the date of Easter Day. It marks the last day of a period of quite indulgence right before the start of the Carême or Lent, when sobriety and frugality need to be respected.
In France, other than parades in the streets with costumes, people cook large quantities of deep-fried
beignets
 
According to NPR website, in fact, many countries have different sorts of doughnuts for Mardi-Gras:

 
the Polish communities have their “Paczki” with or without jam inside:

 

 
the Portuguese and Hawaii have the Malasada:

 



the German have Fastnachts and the Italian have Castagnoles and Cenci: 





while the French have Beignets:

Ingredients:
 
250g flour
100g sugar
20g butter
1 pinch of salt
1 vanilla bean
1 pinch of cinnamon
1 pinch of nutmeg
1 lime
2 eggs
10cl water
1L oil
6cl old rum
20g caster sugar or icing sugar

 
Preparation:
 
1) Separate the egg yolk from white, sieve the flour and grate the lime zest. Open the vanilla pod and scrape the seeds out. 
 
2) In a large bowl, put the flour, pour the water, the sugar, add the salt, vanilla, cinnamon and nutmeg. Mix well. Add in the melted butter, rum. Mix well and put aside. 
 
3) Beat the egg whites until firm, and carefully add them into the mixture. Mix until smooth. Pour a bit of oil into the saucepan. Once it’s a heated, use a tablespoon to pour some pastry into the oil.
 
4) The small “Beignets” will straight move back up to the surface, turn them around to ensure they are golden everywhere. Once they are golden take them out of the oil and place them on absorbing paper (kitchen towel).
Sprinkle them with the caster sugar and serve immediately! Yummy!!!
